The Aube is geologically distinct from the Marne: Kimmeridgian limestone and clay, the same formation that runs under northern Chablis. This terroir produces Pinot Noir with darker fruit, firmer structure, and a saline edge that the more famous northern districts don't quite replicate. For decades, most Cte des Bar fruit went to the
